I made a pie

The UBC apple festival was great! While I didn't get any of the apple juice I mentioned, there was a good reason for that: I was carrying a box containing seven different bags of apples (and one of pears) plus an apple tree. So I've been eating apples like crazy, and I planted the tree and baked a pie.

The tree is a Karmijn de Sonnaville, an eating apple that I got on dwarf rootstock, and planted in my garden out on Blackie Spit. I've got high hopes for that baby, and loaded it up with dolomite, bonemeal, some compost and steer manure, and a spot all for itself. Yum!

The pie I made from Winesaps. I got my wife to make the pastry dough (well, she's a pastry chef, okay?) but I rolled it out and made the filling. I used a recipe from The Pie and Pastry Bible for the filling--I ground the cinnamon and nutmeg fresh, and after the apple slices had marinated for a half-hour in lemon juice, sugar, salt etc. I drained the liquid off and reduced it with butter until it made a caramel syrup, and returned it to the fruit with the cornstarch.

Best pie I ever made. But it did point one thing out to me: I don't have the touch for good pastry. It nearly killed me to roll the silly thing out, and you can see I had trouble cooking the crust evenly (yes, I covered the edges in foil, but they still got darker than I wanted)

But the little leaf and the heart and starfish were my doing. I'm so proud.

I'm off to Campbell River tomorrow, to do a consumer event for Limited Edition (put the kettle on Barb, I'm on my way) and I'm going to take a big bag of apples for the ferry ride over. Nom!
