Eventually, It's About the Cats

Original Lolcats, by Adam Korford
This blog keeps surprising me with the amount of mail it generates. Folks have questions about winemaking, specific wines, food pairings and all kinds of stuff about fermenting and drinking. Some people have inquiries about the company, or my speaking schedule, and once in a while a fan letter (no, really. It was just my mom, but that counts)
But a large percentage of the inquiries I get are about my cats. I'm not sure who it was who first said, 'All internet conversations eventually devolve to cats or food', but it's true. If you do a Google search on 'cats' you'll get 48 million hits ('dog' only gets thirty million) while 'food' nets nearly sixty million sites ('drink' gets 18 million--where are your priorities, people?) but ever since I mentioned in Hi, I'm Tim that I live with a couple of horrible little cats, they're getting all of my press.
And well they should. There's nothing like living with a pair of Siamese to ruin you for other cats. When we took them home at 12 weeks our Veterinarian, a wonderful and gentle Irishman intoned ominously, "Ah now me lad, you're in for the full Kitty Experience." Siamese are like other cats, but turned all the way up to 11, complete with the ability to open doors, windows and cupboards, the unflinching conviction that the universe owes them an explanation (and an apology, and some tuna) and the smug sense that they own everything and pink apes are only here to operate the can opener.
This is Coco, our girl, helping me type:

She's the smart one, who can look innocent at the drop of a hat. She's also the one that can climb stucco walls and likes to sing opera at 3 a.m.
This is Spot, my 20-pound serial killer, in his usual pose:

Spot once caught a Heron (I took it away from him and he moped for days) and has so far killed every other mammal he's ever encountered (aside from his sister Coco), unless I was present to stop him. What a little bundle of love and joy!
Oddly enough, despite being the classic devolution of an otherwise straightforward wine blog, this has relevance. Both of these horrible little scourges help me with food and wine pairings. Coco's favorite snack treat is potato chips, and I found out that the perfect pairing for them was Gewürztraminer from getting her a chip while enjoying a glass. Spot's favorite food is asparagus, and it turns out a good New Zealand Sauvignon Blanc can stand up to it. Unfortunately, Spot doesn't actually digest the asparagus, merely stores it for a while before using it to decorate the carpet in various out-of-the-way spots (where do you think he got his name?)
Moreover, if there's one thing that's required of winemakers it's patience, and if there's one thing a couple of Siamese cats can teach you . . .
